  • Cherry pie filling or blueberry or raspberry


  1. Preheat oven to 350° F.
  2. Mix sugar, cheese, eggs and lemon juice together until smooth.
  3. Line cupcake pans with papers and place 2 vanilla wafer in bottom of each. Spoon cheese mixture over wafers to fill cup 3/4 full. Bake 18-20 minutes. Cool. Spoon pie filling on each cupcake and refrigerate at least 1 hour Servings: 2 dozen cupcakes
