  1. For the sauce: Combine all the sauce ingredients in a bowl. Stir to combine and evenly distribute the sugar. Set it aside.
  2. For the shrimp: Lightly salt the peeled shrimp. Combine the coconut flakes and flour in a wide, shallow dish until evenly mixed.
  3. Dip each shrimp into the beaten egg white and then roll in the flour mixture, making sure to coat completely.
  4. Heat about one inch of vegetable oil a large sauté pan over medium-high heat. Add the shrimp, a few at a time - do not crowd, and cook until the coconut begins to brown.
  5. Remove with a slotted spoon and drain on paper toweling or brown paper. Season with additional salt while hot if desired.
  6. Stir the mango sauce and serve with the shrimp. Garnish with cilantro.
