Z'Tejas Southwestern Grill Breakfast Quesadillas
- 3 eggs, whipped
- 8 oz sausage, cooked and chopped
- 8 oz bacon, cooked and chopped
- 8 oz salsa fresca
- 8 oz potatoes, fried and chopped
- 8 oz jack cheese, grated
- 1 (9-inch) flour tortilla
- 1 cup sour cream
- 8 oz chipotle peppers
- 8 oz milk
In a food processor, combine chipotle peppers, sour cream and milk; process until peppers have been finely chopped. Pour mixture through a sieve. Set aside.
Brush a large nonstick skillet with butter or oil. Place skillet over medium heat. Add sausage, bacon and potatoes; heat 30 seconds. Add eggs; cook until almost done. Add salsa fresca; continue cooking until eggs are done.
Butter one side of the flour tortilla. Add egg mixture and jack cheese to tortilla fold over to crisp up. Cook tortilla on each side until crisp.
Serve with sour cream mixture.Makes 4

Z'Tejas Southwestern Grill
In 1989, the first Z'Tejas was born in an old Victorian house on Austin's historic 6th Street. The menu, largely influenced by the south, signifies the bold robust flavors of Arizona, California, Louisiana, New Mexico and Texas.
By 1993, Z'Tejas was operating two more locations in Scottsdale, Arizona. Today, they have 10 restaurants in the Western United States.
Where did they get our name? Well, the origin of the name is a story that varies depending on who's telling the tale. But as Shakespeare said, "A rose by any other name would smell as sweet."
