Eddie V's Edgewater Grille-style Jicama Slaw

Ingredients:

  • 3/4 cup snow peas, julienned
  • 3/4 cup jicama, julienned
  • 1/2 cup carrots, julienned
  • 2 Tbsp cilantro, chopped
  • 1/4 cup green cabbage, shredded
  • 1/4 cup red cabbage, shredded
  • 1 Tbsp olive oil
  • 1 Tbsp lime juice
  • 1 1/2 Tbsp aged rice wine vinegar
  • 1 tsp kosher salt
  • 1 tsp black pepper

Preparation:

In a large bowl combine all of the ingredients and mix well.
