Emeril's-style Fried Plantains
- 4 each ripe plantains
- Oil for frying
- Freshly ground pepper to taste
Preheat the fryer. Peel the plantains and slice thinly on the bias. Fry in batches until golden brown, about 2 minutes, stirring occasionally.
Remove from the oil and drain on paper towels. Season with salt and pepper.Makes 2 Source:
