Wendy's Lemon Poppyseed Muffins
- 1 cup Sugar
- 1/2 cup Margarine, Softened
- 2 Eggs
- 3 Tbsp Lemon Juice
- 2 tsp Poppyseeds
- 1 Tbsp Grated Lemon Peel
- 1/2 cup Buttermilk
- 1-1/2 teaspoon Baking Powder
- 1/2 tsp Salt
- 1-1/2 cup Flour
Cream together Margarine and sugar. Add eggs and mix well.
Add lemon juice and poppyseeds, peel, and buttermilk. Mix well.
Add baking powder, salt, and flour. Mix well.
Pour into greased or lined muffin tins and bake at 350 degrees for 15 minutes.Makes 12 Source:
