Zydeco's Pork Tenderloin Etouffee

Ingredients:

  • 1 oz oil
  • 1/3 lbs diced onions
  • 1/3 lbs diced celery
  • 1/3 lbs diced green peppers
  • 1 tsp garlic puree
  • 8 oz tomato paste
  • 1 bay leaf
  • 1 tsp basil
  • 2 Tbsp honey
  • 1 quart veal stock
  • 1/4 cup light corn syrup
  • Pinch of thyme
  • Pinch of chili powder
  • Pinch of cayenne pepper
  • Pinch of black pepper

Preparation:

Sweat onions, celery and bell peppers in the oil. Add the tomato paste and garlic. Add the remaining ingredients and simmer for 15 minutes.

Brown pork in a sauté pan. Add sauce and reduce.
